Ingredients
2 tomatoes or 1 can of stewed tomatoes with juice
1/3 cup celery, diced
salt & pepper to taste
1 cup kale, chopped
1 tbsp butter
3 eggs, poached
1 tbsp sunflower seeds
1 tbsp flax seed
1 tsp chili flakes
1 tsp minced garlic

Add diced tomato, celery, salt, and pepper to a medium-sized simmering pot. Heat till boiling, remove from heat, and let rest. Add kale, minced garlic, and butter to a small saucepan, and fry for 2–3 minutes until slightly wilted.

Bring 2-3 cups of water to a gentle simmer in a separate pot and crack the eggs into the water. Cook the eggs for 3-5 minutes until whites are set, keeping the yolks runny.

When serving, place the tomato stew in a small bowl, with kale and poached eggs on top.

Garnish with sunflower seeds, Green Fox Hemp Hearts, and a drizzle of Green Fox Hemp Seed Oil. Finish with a sprinkle of chili flakes or flax seeds for an added burst of flavor.
